Mini French Toast

So, it's a miserable, rainy day and cold.  I think it's official - fall is finally here to stay.  And really, it feels like summer ONLY just started.  Before long the snow will creep down the mountains and lay a clean, white blanket out on the front lawn.  I'm not ready.

And cold weather seems to get my brain thinking about food - comfort food that fills the tummy and warms the heart!

Mr. Hungry has a new job too.  Good news, for sure!  But, with good comes bad.  Or 'so-so'.  This means that at times, he's going to be gone from home some nights (usually every 2nd/3rd night) and I'm running this ship on my own!

So, to break them in kindly, I've decided that the nights he's away the kids and I will eat pretty much whatever we went.  Well, within reason.  But we'll try to make it fun.  Makes the feelings of Daddy being gone just a little bit easier.

Knowing Loo Lee, it would be Itchiban (Itchy Bum, she says) noodles.  Knowing Biggie Wiggie, it would be cereal.  Being that I'm the one with the final say, I can't eat those multiple times in a week so I tend to steer them in a different direction.  What we finally decide on is usually not such a bad dinner and most times (OK, I will admit that the night we had french fries and bacon was NOT particularly well balanced) it is easy, fills the tummy and makes us all feel good.

So, tonight we decided on having French Toast.  Yum.  Easy, delicious - both kids like it!  And that, is a double bonus!!  Eggs, bread - not all that bad, right?  And why not make it fun!  So, instead of plain old French Bread - we're using BAGUETTES!!  Join us!

MINI FRENCH TOAST(IES)
Makes: 15-20 rounds


15 slices of baguette (we used Waldorf white, but whole wheat will work just fine)
4 eggs
2 tsp vanilla
1 tsp icing sugar
1 tsp cinnamon
2 Tbsp cream or milk

4 Tbsp Oil

Topping - icing sugar and syrup








Slice the baguette into 1/2" rounds.  We actually find that after a Date Night, there's usually leftover baguette and just use that. In this case, I bought one specifically for us girls!!






Beat together eggs, vanilla, 1 tsp icing sugar, cinnamon and cream.

Heat a cast iron or non-stick pan over medium heat, and brush on a light layer of oil.  Why brush?  Just distributes the oil easier.  As you can see - this brush as seem many a hot pan.





Dip baguette rounds into egg mixture, making sure to coat both sides.  Just a light dip will do!  You don't have to leave them swimming!


Fry for 2-3 minutes on each side, or until lightly browned.

And super kid friendly too!  Our kids eat them with their fingers!!

Serve hot with whatever you like on top!


Loo Lee likes hers with syrup.


Karsyn prefers just a light dusting of icing sugar.

Mr. Hungry missed out on this batch, but he likes his with syrup AND icing sugar!!
